Pasta with Tomato and Basil Sauce
Ingredients
- 200g fusilli pasta.
- 1 large onion.
- 2 cloves of garlic.
- 1 can of chopped tomatoes.
- Splash of balsamic vinegar.
- Pinch of sugar.
- Pinch of chilli powder.
- Small handful of fresh basil.
(serves 2)
Method
- Finely chop the onion and garlic.
- Add a little olive oil in a pan and add the garlic.
- When the garlic begins to sizzle add the onion and saute until soft.
- Add the tomatoes, balasmic vinegar, sugar and chilli powder to the pan and stir well.
- Season with salt and pepper.
- Simmer gently until the pasta is ready.
- Meanwhile, add the pasta to a large pan of well salted water and simmer for 10-15 minutes until al dente.
- When the pasta is almost ready, tair a small handfull of fresh basil into the sauce.
- Drain the cooked pasta.
- Serve the sauce on top of the piping hot pasta and grate a generous amount of paramesan on top.
- Season with salt and pepper, and enjoy.
