Pasta with Tomato and Basil Sauce

Pasta with Tomato and Basil SauceIngredients

  • 200g fusilli pasta.
  • 1 large onion.
  • 2 cloves of garlic.
  • 1 can of chopped tomatoes.
  • Splash of balsamic vinegar.
  • Pinch of sugar.
  • Pinch of chilli powder.
  • Small handful of fresh basil.
    (serves 2)

Method

  1. Finely chop the onion and garlic.
  2. Add a little olive oil in a pan and add the garlic.
  3. When the garlic begins to sizzle add the onion and saute until soft.
  4. Add the tomatoes, balasmic vinegar, sugar and chilli powder to the pan and stir well.
  5. Season with salt and pepper.
  6. Simmer gently until the pasta is ready.
  7. Meanwhile, add the pasta to a large pan of well salted water and simmer for 10-15 minutes until al dente.
  8. When the pasta is almost ready, tair a small handfull of fresh basil into the sauce.
  9. Drain the cooked pasta.
  10. Serve the sauce on top of the piping hot pasta and grate a generous amount of paramesan on top.
  11. Season with salt and pepper, and enjoy.

Spicy Sausage & Lentils

I had a very nice tea tonight - definately not my normal dinner time fare.? Some very tasty toulouse sausages served with a spicy tomato and vegetable sauce on a bed of lentils cooked in garlic.? Definately having that one again!
